VEGAN PUMPKIN SPICE LATTE

Hello coffee lovers, or non-coffee lovers (like myself),

Fall weekends call for Fall festivities, and Fall festivities call for making pumpkin spice lattes! I have never developed a love or need for coffee, but there’s something about specialty mochas and lattes (Starbucks inspired) in the Fall and Winter that just instantly brighten up my day. I’ve combined a few recipes I found online to create what I believe to be an awesome pumpkin spice latte. So if you don’t feel like making a Starbucks run and want to be adventurous and make your own at home, enjoy!

 

This recipe makes 1 serving

What you’ll need:

  • 1/2 cup of coffee (or more if you want a stronger coffee flavour)
  • 1 cup of non-dairy milk (I like almond or coconut)
  • 2 tablespoons of pumpkin puree
  • 2 tablespoons of maple syrup
  • 1/4 teaspoon of pumpkin spices/ pumpkin pie spices
  • 1 teaspoon of vanilla extract
  • Optional: cinnamon, vegan whipped cream

Directions:

  • Brew the coffee
  • Meanwhile whiskΒ the milk and pumpkin puree in a pot over a medium heat
  • Add in the maple syrup, pumpkin spices, vanilla and continue whisking
  • Mix in the coffee
  • Pour in to a mug and top with cinnamon and/or vegan whipped cream if desired
