Miso shiitake soup

Hello my lovely readers!

Wow it has been so long since my last post! Sometimes life just gets in the way and hobbies get pushed to the side. Seeing as it’s winter, I thought I’d share one of my favourite soul-warming soup recipes! This miso shiitake soup is so clean and healthy, filled with quinoa and vegetables. One of the best parts- it asks for minimal ingredients and is ready in 15 minutes. It’s definitely a great post-holiday detox meal!

Happy Friday tea-drinkers!

The cold weather has kicked in and so has the warm comforting drinks! Although I enjoy a specialty mocha or latte from time-to-time, I have never been a coffee drinker, so teas are my go-to. Finding the right tea is like finding the right shoe; it’s all about finding the perfect type for the perfect occasion/mood. It seems like there has been a tea craze going on the past few years with all the flavours and specialty shops out there. VEGAN PUMPKIN SPICE LATTE

Hello coffee lovers, or non-coffee lovers (like myself),

Fall weekends call for Fall festivities, and Fall festivities call for making pumpkin spice lattes! I have never developed a love or need for coffee, but there’s something about specialty mochas and lattes (Starbucks inspired) in the Fall and Winter that just instantly brighten up my day. I’ve combined a few recipes I found online to create what I believe to be an awesome pumpkin spice latte. So if you don’t feel like making a Starbucks run and want to be adventurous and make your own at home, enjoy!

30 minute booty burn

Happy Wednesday!

I workout 5 or 6 days on 7, with a variety of cardio, HIIT, toning, yoga and aerobic/dance exercises. Today I woke up feeling like a leg day, so I decided to make up my own circuit to kick my own butt…and boy did I! I seriously cannot remember the last time I sweat this much (I had to go and take my asthma pump afterwards!)

Overnight chia oats

Happy 4th of July to all my American followers!

I wanted to share one of my favourite breakfast or snack recipes because it is super easy to make and great for those of you who are busy and trying to keep a healthy lifestyle (so.. Pretty much all of us 🙂 ).  If you’ve never ventured in to the world of overnight oats, you prepare the jar in the morning and your breakfast is all ready for you when you wake up in the morning and are rushing out the door. There are so many variations to overnight oats, even within my recipe. However, I can confidently say that I feel as though I have mastered my oats. They come out sweet (without any added sugar), flavourful and with the perfect ratio of liquid to oats. If you prefer your oats more saturated, you can always add more milk.

Easy Homemade granola

Hello everyone!

One food I love, wether for breakfast or as a snack over Greek yogurt, in almond milk or as a trail mix is granola. I have definitely  bought my share of different brands on the market but realized that it would most likely be more cost efficient and healthier (no added sugars, salts or preservatives) if I made my own. So I did! After watching numerous YouTube videos and reading recipes I finally baked what I think is an awesome, tasty granola, packed with nutritious nuts and dried fruit.

SHIITAKE MUSHROOM QUINOA BOWLS

Good Wednesday morning everyone!

Today I am excited to share with you one of the most simple yet flavourful recipes that has been a favourite of mine for years. It is full of colours, flavours, and textures… you know they say you first eat with your eyes before your mouth! This quinoa bowl is actually what helped initially bring me to the realization that eating healthy, natural ingredients does not have to mean giving up delicious meals that you look forward to. In fact, the more I eat well, the more I indulge in plant-based, wholesome foods instead of the sugar-filled candy and chocolate I had always craved.

This quinoa bowl is perfect for lunches or dinners as complete meals or sides. It is so versatile so you can swap the ingredients for whatever you have in your fridge, and once prepared it can also be kept refrigerated all week (minus the avocado). This said, my favourite time to eat it is when it is freshly cooked and the quinoa, mushrooms, spinach and crispy shallots are still warm.

Asian peanut sauce stir-fry

Hello Lovelies!

Today I thought I’d share with you a favourite recipe of mine; a stir-fry with broccolini, shrimp (chicken or tofu), and brown rice (or quinoa) in a light peanut sauce that is easy to make, healthy yet mouth-wateringly delicious! I found this recipe years ago in a random magazine on an airplane and have since altered it several times to perfection (in my opinion). I am not usually one to like dishes in a peanut sauce as I often find them overpowering and am not a huge peanut butter fan to begin with. Something about the lightness of this one mixed with ginger, lime, coconut and jalapeño peppers just puts it in another playing field.

My 3 go-to breakfasts

Good morning everyone!

Today I thought I would share with you my top 3 go-to breakfasts that are quick, easy, healthy and most importantly delicious! I actually do crave them sometimes. I love these 3 options because they are balanced, have protein and give me enough energy to get me through a morning workout or until lunch time without hearing my stomach grumble (though I usually have a light snack between breakfast and lunch). I must admit that from time-time to I use the “it’s Sunday” excuse for my boyfriend to make me some delicious homemade chocolate chip waffles, but in all honesty, I always feel the heaviness in my stomach afterwards…..which ….makes me feel like being lazy. I see this as a good thing because it is okay to “pig-out” every once in a while, especially when it reminds you how good it feels to eat well.
